Good one Colin! Nice to have a laugh before heading to work. Is there laugh after death ....? I hope so.

Alternative recipe for pancakes (crepes):

1 cup cake flour
1 cup milk
1 cup boiling water
1 dop oil
4 jumbo eggs (yes, 4 (four)!)

Pan: I keep a dedicated pancake + dropscone pan that never gets used for anything else and never gets washed, just wiped after use.

Throw all ingredients into a mixing bowl except the boiling water and mix madly with an electric beater.
Add the boiling water gradually with one hand while continuing the electric beater with the other. The mix should froth up a bit at this stage.
Heat pan to maximum heat on stove ... the stove plate should glow red. The pancake mix should hiss briskly when it's poured in.
Decant some of mix into a spouted jug and pour as little as possible to cover the pan bottom. Roll pan around to spread mix really thin.
Wait till pancake just starts to lift at the edges ... takes about 30 seconds. Flip with spatula to seal other side, just a couple of seconds.
Turn over onto plate.

The whole point of crepes is they should be very very thin, almost transparent if you hold them up to the light. The large amount of eggs allows this as well as the unscarred pan.

Can be used with sweet or savoury fillings. I once held a dinner party using just pancakes, for main dish and pudding. Odd maybe, but the guests didn't leave anything over!

I would say, start with the Tamil Fish Curry (cuda is tops). Then, Beryani; chicken remains most popular.

Thereafter, experiment with what appeals to you from the recipes; the selection is very wide and exotic!

Being on a strict diet (watch that cholesterol!), haven't been on a splurge for a while.... and probably wont be also! :(

I will publish the list of recipe books I have tomorrow (too large to attach here).
