I wouldn't buy a turkey myself......it reminds me of married life........sitting at the same table with a round plump bird who doesn't gobble any more!

Gordon ramsay says rest the bird for the same time you roasted it ie 3 hour roast equals 3 hour resting time before serving time ,apparently it reabsorbs all the juices and tastes tops, the turkey does not need to be hot as the gravy and other side items are

First cover the bird in tin-foil,when its nearly cooked remove foil and place the bacon on the bird.
Par boil your potatoes, then slighty bash them in saucepan( shake from side to side).Remove potatoes and roast them in goose fat.
It gives the potatoes a nice outer crust.
Then get an extra chair round your table, because i will help you eat it........
Dont forget a nice bottle of Vintage Port, 1994 vintage is the best...enjoy

Mac, if you got one from Wollies, its easy just follow the instructions on the back, I prefer the method of boiling and then basting in the oven...
